The combined effect of dielectric barrier discharge plasma and phycocyanin pigment on increasing the shelf life of rainbow trout fillets

Abstract: |
This study evaluated the effects of two treatments, Dielectric Barrier Discharge (DBD) plasma and Phycocyanin (PC) pigment, on increasing the shelf life of rainbow trout (Oncorhynchus mykiss) fillets stored at refrigeration temperature. Microbiological, chemical, and antioxidant properties were assessed over an 18-day storage period. All experiments were performed in triplicate, and standard error of means were obtained. The combined treatment of these two methods significantly inhibited the total psychrotrophic bacterial count compared to the other samples throughout the storage period. DBD treatment alone significantly reduced the level of trimethylamine compared to the control samples (p < 0.05). The combined treatment inhibited ABTS radical scavenging capacity by 80% and increased the ferric reducing antioxidant power compared to the control samples. Therefore, the combined application of DBD plasma and PC proved to be highly effective in prolonging the shelf life of rainbow trout fillets to over 15 days when stored at 4°C (refrigeration temperature).
